Clarifying Fusion Confusion

Reese Oginee, owner of an Indonesian-Cuban Fusion restaurant, believes the indiscriminate use of the word “fusion” has made the term meaningless. This led to Reese’s goal: use more meaningful descriptions of the influences and presentations in her cooking.

One of Reese’s favourite ways to serve food is to present three versions of a dish: Indonesian on one side, Cuban on the other, and a mix of the two in the centre. Reese now calls this Conjoined Cuisine.

Diners are encouraged to participate in suggesting terms. Each month, the maker of the best suggestion gets a free conjoined pasta entree.
